This recipe is very easy to make and is super delicious. It will only take you a total of 20 minutes to prepare these pancakes. The pancakes you will get will be fluffy and a bit crispy on the outside. Extra tip: if you don’t like your pancakes too sweet you can leave the sugar out. The banana inside the pancake batter will act as natural sweetener.
- 1-2 cups flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- ½ teaspoon salt
- 1 cup milk
- 2 eggs
- 1 ripe banana
- ½ teaspoon vanilla extract
- 3 tablespoons melted butter
In a large bowl, whisk together the flour, baking powder sugar, and salt.
In a smaller bowl, mash the banana with a fork until smooth. Add the eggs, milk and vanilla into the mashed banana. Pour the banana mixture together with the melted butter into the dry mixture. Mix all ingredients just enough to get a thick and a bit lumpy batter.
Put a griddle or a skillet on medium heat. Grease the pan with butter or vegetable oil. Drop about 1/4 cup per pancake into the griddle. Cook until they are golden brown, about 2 minutes per side, then flip.
Serve the pancakes hot with sliced bananas and maple syrup.
