Besides pumpkin pancakes, these apple cinnamon pancakes are a perfect breakfast for rainy fall days or chilly winter mornings. So fluffy and so delicious.
- 1 cup flour
- 1 teaspoon cinnamon
- 2 teaspoons baking powder
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 egg
- 2 tablespoons melted butter
- 1 medium apple, preferably red because they are sweeter than the green ones.
Heat a large non- sticking pan to medium-low heat.
In a medium bowl whisk together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt. In another bowl mix the egg, milk, and melted butter. Pour the wet mix into the dry mix and stir until smooth, but still a little lumpy. Stir in the previously peeled and grated apples.
Grease the pan and pour ¼ cup batter for one pancake. Cook for 1-2 minutes and flip. Cook the other side until golden brown.
Serve with maple syrup and apple pieces on top.
