¾ cup gluten free all-purpose flour
3 teaspoons gluten-free baking powder
¾ cup buckwheat flour
1 cup rice milk
2 teaspoons pure maple syrup
Melted butter, to grease
5 apples, chopped, cored, peeled
¾ cup water
½ teaspoon ground cinnamon
1 tablespoon pure maple syrup
Into a large bowl combine the flours and the baking powder and make a well in the centre. In a separate bowl whisk together the milk, the egg and the maple syrup. Slowly add the milk mixture to the flour mixture, constantly stirring until smooth. Allow it to rest for 15 minutes. While the mixture rests go ahead and make the cinnamon apples. Get the chopped apples and place them in a saucepan with the water, cinnamon and maple syrup and bring them to boil over high heat. As soon as they start boiling, reduce the heat to medium-low and simmer for 15 minutes or until the apples are tender. With a slotted spoon transfer half of the apples to a heatproof bowl. With a blender blend the remaining apples in the pan and as soon as it’s smooth, add the reserved apples and set aside. Heat a non-stick frying pan over medium heat and grease it, then using a scoop pour two ¼ cupfuls of batter into the pan, allowing room to spread. Cook for 1-2 minutes on each side. Serve the pancakes warm and with apples.
