I am a woman of habit. Every morning I wake up, exercise, take a shower and prepare breakfast. This has been my routine since forever. I am also a woman who loves to eat healthy food, but still likes to indulge in some pancakes from time to time. This healthy oatmeal pancake recipe is definitely one of my favorites! It is so simple and quick that you will be eating a healthy breakfast in no time.
- 1-¼ cup fat-free milk
- A lightly beaten egg
- 1-¼ cup all-purpose flour
- ½ cup oats (uncooked)
- 2 teaspoons baking powder
- A pinch of salt
- A tablespoon of vegetable oil
Combine the flour, oats, salt and baking powder in a large bowl and mix them well. Pour the milk in a medium large bowl and whisk together with the egg and oil. Pour the wet mix onto the dry ingredients and stir only till the dry ingredients are moistened. You can always add a stir-in option (blueberries, chopped apple, mashed banana or semisweet chocolate chips). Heat your skillet over medium-high heat and proceed to lightly greasing it. Using a scoop pour the batter into hot skillet. Cook until golden brown and then flip to cook the other side. (Flip them only once).
