¼ cup flour
1 teaspoon baking powder
3 medium potatoes
½ cup grated parmesan cheese
½ glass of milk
3 big sage leaves
1.Pour water into a large sauce pan. Add peeled and cut potatoes inside with some salt and bring to boil. Cook for about 10 minutes until they are tender.
2.Blend parmesan cheese and sage leaves.
3.Mash the potatoes with a fork and transfer into a large bowl. Add the parmesan-sage mixture, eggs, milk, flour, tablespoon of olive oil, salt and baking powder. Stir until well combined.
- Grease and heat a frying pan over medium heat. Pour ¼ cup of the batter and cook about 1-2 minutes or until bubbles appear along the edges. Flip and cook for 1 minute more.
